3 tomatoes, chopped, or 1 (14-ounce) can chopped tomatoes, drained
2 chopped shallots
2 tablespoons fresh lemon juice
1 teaspoon dried oregano
1 teaspoon dried thyme
Directions
Set the oven to 400 degrees Fahrenheit.
Add salt, pepper, and 2 teaspoons of olive oil to the fish. In a medium bowl, combine the tomatoes, shallots, 2 tablespoons of oil, lemon juice, oregano, thyme, salt, and pepper.
Place a salmon fillet on top of a piece of foil, oil side down. The foil should be wound around the ends to create a spiral. Salmon should be covered with the tomato mixture. Completely enclose the fish and tomato combination with the foil's sides before sealing the packets. Put the foil package on a sizable, heavy baking sheet. Continue until all of the salmon has been placed on the baking sheet, individually wrapped in foil. Bake for about 25 minutes, or until the salmon is barely cooked through. Transfer the foil packets to plates using a sizable metal spatula before serving.
