Mashed Tofu Salad

1 14-ounce package firm tofu

Kosher salt

8 cups spinach leaves

1 tablespoon sesame seeds

1 1/2 teaspoons sugar

1 teaspoon mirin (sweet rice wine)

1 teaspoon soy sauce


  1. Tofu should be drained and wrapped in paper towels to absorb extra moisture. Once completely smooth, transfer the mixture to a bowl and leave it aside.
  2. A large saucepan of salted water should be brought to a boil. Place ice water in a bowl. After roughly two minutes in the boiling water, strain the spinach and immediately submerge it in the freezing water. Squeeze and drain the extra water.
  3. In a skillet over medium-low heat, toast the sesame seeds while tossing frequently for about 3 minutes, or until brown. After cooling, grind in a spice mill. Tofu is mixed with crushed seeds, sugar, mirin, soy sauce, and spinach. Use salt to season.
