4 baby bok choy (about 1 pound), split horizontally
2 tablespoons finely chopped chives
4 teaspoons reduced-sodium soy sauce
2 teaspoons lime juice
1 teaspoon lime zest

Bok choy should be placed in a steamer basket, which should be placed over simmering water rather than in it. Bok choy should be steamed for about 6 minutes, or until the base is barely soft when poked with a knife. In the meantime, combine the sugar, lime juice, lime zest, soy sauce, and chives in a small bowl. On a dish, place the bok choy and sprinkle with the soy mixture. Serve with a drizzle of hot sesame oil.
