In a blender, combine the banana, eggs, egg whites, oats, flour, sugar, baking powder, vanilla, cinnamon, and salt. Puree until completely smooth. Add the chia seeds and mix well.
Over medium-high heat, heat a large skillet. To coat, brush with butter. To make pancakes, pour 1/4 cup of batter into the pan. Cook for 2 minutes, or until bubbles breach the surface of the pancakes and the undersides are golden brown. Cook for 1 minute on the other side after flipping using a spatula. Repeat with the remaining batter, adding extra butter as needed to the skillet.
Immediately serve the pancakes. Garnish with berries and maple syrup.
