Use salt and pepper to season the chicken. In a large skillet or frying pan over high heat, toss with 2 tablespoons of olive oil and cook until golden on both sides. Add oil, thyme, and garlic cloves after removing from the fire. For 1 1/2 hours, bake with a cover.
Chicken should be taken out of the oven, rested for five to ten minutes, then carved and served.
