40 Cloves and a Chicken

1 whole chicken (broiler/fryer) cut into 8 pieces

1/2 cup plus 2 tablespoons olive oil

10 sprigs fresh thyme

40 peeled cloves garlic

Salt and pepper


  1. Set oven to 350 degrees Fahrenheit.
  2. Use salt and pepper to season the chicken. In a large skillet or frying pan over high heat, toss with 2 tablespoons of olive oil and cook until golden on both sides. Add oil, thyme, and garlic cloves after removing from the fire. For 1 1/2 hours, bake with a cover.
  3. Chicken should be taken out of the oven, rested for five to ten minutes, then carved and served.
